Frozen Almond Toffee Mousse

This is my husband's new favorite dessert. He has been "accidentally" coming home with all of the ingredients, so of course we have to make it.... Because it only takes 2 minutes and it only has 2 ingredients.

No joke.

But if you serve it in cute little ramekins with a sprinkle of cocoa powder and a sprig of mint or an almond roca at a dinner party, everyone will think its the fanciest thing ever and they'll never know how embarassingly easy it is... So shhhhh.

Frozen Almond Toffee Mouse

1 tub of cool whip (regular size, not the big one, unless you want to double up the recipe which is fine with me!)
1 large Symphony bar (or other chocolate bar of your choice, I like symphony because of the toffee. Mmm, toffee)

1. Remove the cool whip from the freezer and let it sit on the counter for 10 or 15 mins. After that, give it a good stir to soften it up a bit.

2. Unwrap the chocolate bar and place it on a microwave safe plate. Microwave for about 45 seconds. The chocolate should be soft and melty all the way through, (if not, give it another quick nuke) then scrape the melted chcolate off of the plate and into the cool whipe and stir it about. The chocolate will begin to cool, forming little chcolate bits and flecks through out the cool whip!

3. Now you can either eat it right away, or throw it back in the freezer until it gets stiff again, then eat it like ice cream. Delish.
